Ingredients
For the stackers
41 cm slices of Clonakilty Black Pudding
21 cm slices of red applecored
21 cm slices of aubergine
21 cm slices of red pepper
21cm rings ofhalloumi
Micro herbsfor dressing
For the sharmula relish dip
1large bunch of parsleyfinely chopped
1large bunch of corianderfinely chopped
4cloves ofgarlicpressed or finely chopped
2tbsppaprika
1tbspcumin
1small red chilli
1tspsalt
1tspfresh ginger(optional)
½tspcayenne pepper(optional)
3tbspvegetable oil
Juice of 1 smalllemon
Instructions
Place all the ingredients for the sharmula relish dip in a food processor and blend until finely chopped.
Leave for 30 minutes for the flavours to develop.
Taste and adjust seasoning if needed.
Place your pan on a hot searing heat.
Brush all your ingredients with olive oil before placing in the pan.
Griddle the vegetables for 2 to 3 minutes on each side, then griddle the black pudding for 2 to 3 minutes on each side.
Serve as a stacker with the sharmula relish dip.
