Watermelon & Courgetti Quinoa Salad

Summer is the perfect time to make the most of the abundance of fresh seasonal produce available with a little al fresco dining. pollen + grace have come up with this delicious and healthy Watermelon and Courgetti Salad with Lime and Chilli dressing, packed with the superfood Quinoa, to create the perfect summer plate of light, fresh and refreshing flavours.

Ingredients

For the salad

  • 2 courgettes
  • ¼ watermelon
  • ½ cucumber
  • 1 tbsp black sesame seeds
  • 1 cup quinoa cooked

For the dressing

  • 2 chillies
  • Juice of 3 limes
  • Zest of 1 lime
  • 2 tbsp honey
  • ½ cup olive oil
  • ½ cup water
  • Himalayan salt to taste

Instructions

For the salad

  • Using a spiraliser, make the courgette into ribbons and cut the cucumber into small chunks.
  • Mix the courgetti with the quinoa, cucumber, lime juice and zest, himalayan salt and olive oil.
  • Remove the rind from the watermelon and cut into squares.
  • Mix the watermelon into the courgetti mix and sprinkle the black sesame seeds over the top.
  • Optional - top with grilled king prawns, 4 per person, if desired.

For the dressing

  • De-seed and remove the stalks from the chilli.
  • Add all the ingredients to a blender and mix until fully combined.
  • Serve.
